Recipe of the Week: Lemon & Rosemary Roasted Cornish Hens

Seasons greetings everyone! Christmas is right around the corner, so we thought it would be nice to share a recipe that could be the centerpiece for your Christmas dinner: Lemon & Rosemary Roasted Cornish Hens! These will take some time and effort, but believe us when we tell you that it is worth it.

Overview
Prep Time: 20 Minutes
Cook Time: 45-60 Minutes
Total Time: 65-80 Minutes

(Hens are good for 5 days after making)

Ingredients
2 Cornish Game Hens
2 tsp olive oil
2 lemons, cut into wedges
6 tbsp dried rosemary
4 fresh rosemary sprigs
2 tbsp no salt herb seasoning
2 tsp black pepper

Directions
1.) Preheat oven to 400 F

2.) Place hens in a roasting pan, breast sides up. Rup olive oil all over hens. Place 1 rosemary sprig and 1 lemon half in cavity of each hen. Loosen skin from breast, and rub half of the dried rosemary underneath the skin and remaining seasoning, including back pepper on the skin. Squeeze lemon halves over hens

3.) Roast hens, rotating pan halfway through until skin turns golden brown from 45 to 60 minutes

4.) Let stand 10 minutes before serving. Cut hens in half lengthwise. Garnish with remaining rosemary sprigs, and serve with lemon wedges
