Recipe of the Week: Healthy Gingerbread Loaf

Hi everybody! Now that December is in full swing, we at CEFN think it’s a good time to start looking at some festive recipes, and what better recipe to start with than a Healthy Gingerbread Loaf!

Prep Time: 10 Minutes
Cook Time: 45 Minutes
Total Time: 55 Minutes
Servings: 8 Slices

1/4 cup molasses
1/4 cup maple syrup
1 cup applesauce unsweetened
1 egg
1/4 cup coconut oil, melted and cooled
1/2 cup almond milk
2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 bsp ginger
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves

8×4 Loaf Pan
Non-stick spray (or another alternative)
Bowl (for mixing)
Airtight container (if storing for later)

Baking Time!
1.) Preheat oven to 350 F and prepare a greased 8×4 loaf pan.

2.) In a bowl, mix molasses, maple syrup, applesauce, egg, almond milk, and coconut oil until smooth.

3.) Add in whole wheat flour, baking powder, baking soda, and spices.

4.) Pour batter into greased 8×4 loaf pan. Bake for 40-45 minutes until a toothpick or cake tester comes out completely clean when inserted in the center of the bread.

5.) Allow the bread to cool for 30 minutes. Store in an airtight container in the refrigerator to maintain freshness.
