Hi everyone! Last week, we looked at the savory Cauliflower Mac and Cheese. This week, we’re going to be looking at a sweet and crisp recipe: Honey Crisp Salad. This makes for a great side next to your entrees and is delicious and refreshing to boot!

Servings: 8-10 servings
Ingredients
Be sure to gather the following ingredients:
– 1/2 cup olive oil
– 1/4 cup apple cider vinegar
– 1/4 cup unsweetened apple juice
– 2-3 tbsp honey
– 1 tbsp lemon juice
– Freshly ground black pepper to taste
– 3 medium Honeycrisp apples, thinly sliced
– Juice of 1/2 lemon
– 12 oz mixed salad greens
– 1 cup pecan halves (toasted)
– 3/4 cup dried cranberries or dried cherries
– 4 ounces crumbled blue cheese
Equipment
Be sure to get some of the following:
For the apple cider vinaigrette: a jar with a lid, a medium bowl, or a blender / mini food processor
For the salad: a bag to shake, and a salad bowl to plate
Let’ s Get to Cooking!
We are going to split the cooking into two parts. The first will cover the apple cider vinaigrette, and the second will cover the salad itself.
Preparing the Apple Cider Vinaigrette:
1.) Measure oil, apple cider vinegar, apple juice/cider, honey, lemon juice, salt, and pepper into a jar
2.) Tightly screw on lid and shake vigorously until everything is combined
Alternatively, you may briskly whisk the ingredients together in a medium bowl, or blend them in a blender or mini food processor.
Preparing the Salad:
1.) Place apple slices in a large plastic bag and squeeze the fresh lemon juice (from the lemon half) over them. Close bag and shake to coat.
2.) In a large salad bowl, layer salad greens, apple slices, pecans, dried cranberries, and blue cheese. Just before serving dress with desired amount of apple cider vinaigrette and toss until salad ingredients are evenly coated.
