Greetings everyone! As the weather gets cooler and all sorts of holidays approach, we are going to start covering recipes that you can use at your family gatherings. This week, we’ll take a look a Cauliflower Mac and Cheese, a savory dish that pairs well with a lot of meals! This recipe is by Chef Vicki Mines, and was originally featured in our holiday recipe booklet, now posted here for your convenience!

Ingredients
You are going to want to gather the following…
– small or medium head of cauliflower
– 5 cups of water
– 1-2 tablespoons of I can’t believe it’s not butter (or your desired butter)
– 1 teaspoon of turmeric
– 1 teaspoon of garlic powder
– 1 teaspoon of black pepper
– 1 cup of smoked gouda (or your desired cheese)
– 1 cup of Havartil
– 1-2 cups of almond milk
Equipment
Don’t worry, this recipe requires common equipment.
– Pot
– Casserole dish
Let’s Get Cooking!
1.) Preheat oven to 400 degrees F. Bring water to a rapid boil.
2.) Chop cauliflower into medium florets. Boil for 5 minutes, then drain.
3.) Place cauliflower into casserole dish and stir in butter. Add milk and cheese, then stir until cauliflower is well mixed
4.) Bake for 30-45 minutes or until tender.
